Sunset is the moment when a star disappears below the horizon. From a strictly astronomical point of view, the point on the horizon from which the center of the solar disk passes at sunset corresponds exactly to the direction of the west only on the dates of the equinoxes: for example, in the Northern Hemisphere, it moves respectively to the northwest in the spring and summer months (reaching its northernmost point at the summer solstice) and to the southwest in the autumn and winter months (similarly, reaching its southernmost point at the winter solstice).
