Una delle delizie culinarie della Spagna è sicuramente il prosciutto jamon. Di passaggio da Barcellona un salto al mercato coperto dove tra le tantissime bancarelle non mancano quelle che vendono il famoso salume iberico. Appena affettato è messo sotto vuoto per favorire i turisti.

Il jamón serrano (letteralmente “prosciutto di montagna”) è un alimento ottenuto dalla salatura e seccatura all’aria dagli arti posteriori del maiale di razza bianca. Questo stesso prodotto riceve anche il nome di paleta o paletilla quando si ottiene dagli arti anteriori. La denominazione jamón serrano è riconosciuta come specialità tradizionale garantita (STG). Il prosciutto serrano è anche popolarmene noto come “Jamón del país” o “Jamón curado”.
