Di passaggio ad Ibiza, dove a dir la verità sono stato poche volte, non poteva mancare un pranzetto con un po’ di jamon iberico come aperitivo.

A me poi il prosciutto crudo, poiché di questo che si tratta, piace sempre un po stagionato (quasi secco) e tagliato un pochino più spesso; quello spagnolo originale, per tradizione, è tagliato a mano e non con l’affettatrice come da noi in Italia.

Per chi non lo sapesse “il Jamón ibérico (prosciutto iberico), o pata negra, o carna negra, è un tipo di prosciutto proveniente da maiale di razza iberica, molto apprezzato nella cucina spagnola e nella cucina portoghese, dove è considerato un prodotto di alta cucina”.
