Tagliatelle con prosciutto e piselli, la ricetta

Tagliatelle con prosciutto crudo e piselli, un piatto semplice e gustosissimo, specialmente durante la stagione dei piselli freschi.

Ricetta per 4 persone.

In un fondo di olio extra vergine, fate soffriggere mezza cipolla tagliata a strisce grossolane, ho aggiunto centoventi grammi di prosciutto tagliato a strisce e ho sfumato con poco vino bianco.
A parte ho fatto bollire per pochissimi minuti circa 800 grammi di piselli freschi (il tempo di cottura varia a seconda della loro dimensione) e li ho aggiunti al fondo di cipolla e crudo.
Una volta che la salsa è amalgamata l’ho fatta raffreddare e poi ho aggiunto circa 80 grammi di panna fresca, rimescolando il tutto.
A questo punto ho messo nella padella le tagliatelle cotte al dente, ho aggiunto poca acqua di cottura e le ho fatte saltare.
Per completare il piatto ho spolverato con formaggio grana grattugiato.
