I corzetti liguri.
Uno dei tipi di pasta più antichi della Liguria sono i corzetti (corzétti stanpæ). Questi medaglioni di pasta fatta in casa e stampati con i timbri di legno con l’effige della famiglia che li prepara, sono una tradizione medioevale delle nostre terre, sia del genovesato sia del Levante ligure.
Questi sono quelli che facciamo da noi al Castagneto ovviamente con il nostro marchio e fanno parte delle lezioni di cucina ligure (cooking class) che teniamo da noi:
