Glass noodles in Vietnam.
Uno dei piatti che piu’ mi piacciono in asia sono quelli in cui l’ingrediente principale sono i noodles.
Questi poi, chiamati di vetro (come e’ facile intuire si chiamano cosi’ perche sono trasparenti), sono tra i miei preferiti.
In questo piatto, gustato in Vietnam, erano conditi con verdure e frutti di mare.
Ma come potete vedere, o non vedere, frutti di mare ce n’erano veramente pochi.

Prima che la dinastia Song (960-1279) incentivasse la coltivazione del frumento, le paste erano prodotte con farine di leguminose o di altri cereali, oppure fecole ricavate da radici o bulbi vari. Il termine mian fu introdotto per indicare prima la farina di frumento e poi anche la pasta da esso derivata.
