I pansoti alla salsa di noci.
Un bel piatto di pansoti, questa volta non quelli triangolari ma quelli tondi (che a volte vengono anche chiamati tortiglioni), dal ripieno magro di verdure e ricotta conditi con dell’ottima salsa di noci sono un bel classico della cucina ligure.
I pansoti sono comprati dal pastificio mentre la salsa è quella fatta in casa da mia mamma, la cui ricetta vi ho già raccontato.

I pansoti, pansòti in ligure, o anche pansòtti (dal ligure pansa, in italiano “pancia”), sono una pasta ripiena tipica della cucina ligure, simile ai ravioli.
