La Baia del Silenzio il 17 ottobre 2021. Le acque quasi trasparenti della Baia del Silenzio e’ difficile trovarle in estate ma spesso in autunno o primavera. Quando c’e troppa gente o le temperature sono troppo calde le acque tendono a riempirsi di alghe verdognole. Se al contrario si trova una bella giornata ad ottobre, come quando ho scattato questa foto, sembra di essere ai caraibi!

a moderna piazza John Fitzgerald Kennedy alla Spezia. Una piazza molto moderna che ho incontrato girando a Levante del centro di La Spezia. Non sono riuscito a trovare molte informazioni a riguardo ma immagino sia utilizzata per un qualche mercato o attività’ al coperto avendo questa struttura che fa da tetto.

Crab soup is an extremely nutritious, popular dish and one of my favorites when I am in Ho Chi Minh City (known to all as Saigon, the former capital of Vietnam). It is prepared with easy to find ingredients and not too complicated to prepare. Especially on rainy or cold days, having a bowl of crab soup to enjoy is so wonderful.

Ingredients
– 1 crab (steamed and from which we extract the pulp); – A couple of pork ribs; – 80 grams of chicken breast; – 40 grams of dried shiitake mushrooms, soaked in water, then thinly sliced (purchased at a Chinese shop in Chiavari); – 1 chicken egg; – 1 can of corn; – 40 grams of diced carrots; – 1 chopped onion; – some coriander; – mixed spices (salt, sugar, seasoning, tapioca (or corn starch), ground pepper, chili sauce or paprika)
Preparation
First I prepare the pork ribs and the chicken breast that I rinse under running water. I put the pork in boiling water and bring to the boil until the meat becomes tender. I continuously remove the foam that forms to make the soup cleaner and I cook everything on medium heat for about 30 minutes. After that I remove the meat but keep the water that will then become the base for the soup. In another pot I boil the chicken and, once cooked, I let it cool and then cut it into small pieces.
At this point I bring the pot of water in which I cooked the pork ribs back to a boil, then add the shredded chicken, crab meat, corn kernels, diced carrots and shiitake mushrooms. I add the spices which include 1 teaspoon of salt, 1 teaspoon of sugar and 2 tablespoons of seasoning. I stir well to absorb all the seasoning and adjust taste with salt. Then I add 30 grams of tapioca starch mixed with 30 ml of water. I slowly pour it into the soup and, when it comes to a boil, I stop. I put an egg in a bowl and beat it well and slowly pour it into the soup stirring only in one direction to create a beautiful pattern. I cook for another two minutes and turn off the heat.
I put the crab soup in a bowl, add some onions, cilantro, ground pepper, fried onions and chili sauce and… then enjoy tasting the finished dish!

NGUYÊN LIỆU * 1 con cua sau đó hấp và bóc lấy thịt cua * 1/2 kg xương heo * 80 gram thịt ức gà * 40 gram nấm đông cô khô, ngâm nước cho nở sau đó thái mỏng (mua tại shop người Hoa ở Chiavari) * 1 quả Trứng gà * 1 hộp bắp * 40 gram cà rốt thái hạt lựu * Rau hành, ngò xắt nhuyễn Gia vị * Muối, đường, hạt nêm, bột năng (hoặc bột bắp), tiêu xay, tương ớt (hoặc ớt bột)
CÁC BƯỚC THỰC HIỆN
Xương heo và thịt ức gà mua về rửa cùng nước muối pha loãng. Sau đó cho vào rổ. Xương heo trụng qua một nước sôi để khử mùi hôi. Bắt nồi nước lên cho sôi, cho xương heo vào hầm cho nhừ. Liên tục vớt bọt để nước súp ngon. Cho lửa vừa khoảng 30 phút cho xương mềm. Bắt nồi nước khác lên cho phần thịt gà vào luộc chín. Thịt gà chín để nguội rồi xé thành sợi. Khi xương mềm, vớt ra ngoài. Đun sôi nồi nước súp lại, lần lượt cho gà xé, thịt cua đã bóc, bắp hạt, cà rốt thái hạt lựu, nấm đông cô vào nấu chín. Nêm nếm gia vị gồm 1 muỗng cafe muối, 1 muỗng cafe đường và 2 muỗng canh hạt nêm vào. Khuấy thật đều cho tất cả thấm gia vị và nêm nếm lại cho vừa ăn. Sau đó cho 30 gram bột năng pha cùng 30ml nước. Rồi đổ từ từ vào nồi súp, khi sánh lại thì dừng lại. Cho 1 quả trứng gà vào tô, đánh đều tay. Đổ từ từ trứng đánh tan vào và khuấy theo 1 chiều tạo vân cho đẹp. Nấu thêm 2 phút thì tắt bếp. Cho súp cua ra bát, cho thêm tí rau hành, ngò, tiêu xay, hành phi và tương ớt, sau đó thưởng thức.

Una delle cime del Monte Zatta sulla Alta Via dei monti liguri. la cima di Ponente del Monte Zatta, che si trova a 1355 metri sul livello del mare regala una vista veramente spettacolare. E’ uno dei sentieri più belli che abbia mai percorso e percorre un tratto della Alta Via (AV) dei monti liguri.

The summit of the Zatta mountain massif consists of a long wavy ridge, crossed by an easy ridge path. On the outer edges of this ridge are the Zatta di Ponente mountain (1355 m) and the Prato Pinello mountain (1390 m). Between the two ends rises the main peak, the Zatta di Levante mountain (1404 m). I portici moderni di Corso Assarotti a Chiavari. I famosi portici di Chiavari sono sicuramente quelli del centro storico della cittadina ligure. Quelli del Caruggio Dritto, di via Rivarola e di via Vittorio Veneto. Ma in tutto il centro ci sono dei bei porticati, ovviamente più moderni di quelli prima menzionati, che sono comunque molto belli. Come questi che si affacciano su Corso Assarotti, una delle vie più trafficate della città.
