Candied fruit, a way to preserve fruit and make it sweeter.
Some time ago now I took this photo in one of the many covered markets in Palma de Mallorca.
In particular in the photo of the candied oranges on the left in slices (rounds) and on the right in large segments.

In the candying process, the water content of the fruit is reduced by osmosis and the sugar content is gradually increased to more than 70%.
