Fleischkaese and Knöpfli, a typical Swiss dish

Fleischkaese and knöpfli, a typical Swiss dish.
I would say my favorite Swiss dish; the name is impossible (I had my mother dictate it to me) but it is truly delicious.
The translation would be "meat cheese" I think because of the shape the meat has once cooked.
The meat, pork, has the consistency of a sausage; you put it in the oven and after a couple of hours it is ready.
As a side dish, pasta dumplings passed in a pan.

Fleischkaese e knöpfli

Leberkäse, also called Fleischkäse, is a meat dish typical of Bavaria, Baden-Württemberg, Switzerland and Austria, but it is also very popular in the rest of Germany and among all German-speaking populations, including South Tyrol. Similar to a meatloaf, in Germany it is actually considered a Wurst, therefore classified as a sausage.

Churrasco in Brasile

churrasco

Churrasco in Brasile.

Carne brasiliana a Salvador

Carne brasiliana a Salvador.

Sausage: the quintessential grilled sausage

Salsiccia macro

Sausage: the quintessential grilled sausage
Sausage is one of my favorite things ever.

Sausage, also known as salciccia in popular use in some regions, is a meat sausage, typical of many Italian regions and widespread throughout the world. In Italy, depending on the ingredients and the areas where it is produced, it takes on various names such as luganega, salamella, salamina, salamino or salametto. The first historical testimony on the use of stuffing pork meat in casing together with spices and salt is from the Roman historian Marco Terenzio Varrone, who attributes its invention and use to the Lucanians: «They call lucanica a minced meat stuffed in a casing, because our soldiers learned how to prepare it from the Lucanians».

Milanese cutlet, my recipe

Milanese cutlet, my recipe.
This evening Marietto wants to eat a nice Milanese cutlet, with real French fries and a tomato salad. During his lunch break he bought 300 grams of veal slices, some potatoes and a couple of tomatoes.
When he gets home, he will grate some dry bread with the cheese grater, then pass it through a sieve to eliminate the larger pieces and beat a whole egg well to which he will add a little salt.
Marietto is then thinking about how good the French fries his mother used to make were, so he peels two potatoes, washes them well and cuts them up like his mother used to. He then slices the tomatoes and seasones them with salt, vinegar and oil. He then flattens the meat well, passes it in the egg and then in the breadcrumbs. Then he puts a first pan on the stove with plenty of oil to fry the potatoes (which take longer to cook than the meat) and then another pan for the meat, cooking carefully so that it doesn't burn. He will salt the potatoes well once cooked and place them on a sheet of paper to dry any residue of frying oil, he will do the same with the meat.
Enjoy your meal!

Minced meat and mashed potatoes

Carne trita e purea

Minced meat and mashed potatoes.
This is almost certainly one of my favorite dishes: minced meat and mashed potatoes.
I don't even know if it's an Italian or Swiss dish (but from the faint memories I have from kindergarten it seems Italian to me) the fact remains that it really drives me crazy.

And if I tell you how I like to eat it… I like to mix everything until I have a “mush” that usually horrifies all the guests but which is delicious.
Enjoy your meal!

Carne trita e purea

Minced meat or minced meat is meat that has been minced to a more or less fine degree. Community regulations define “minced meat” as boneless meat that has been subjected to a grinding operation into fragments and contains less than 1% salt. In the past, meat was minced with a knife or mezzaluna, in modern times the mincing is done using a tool called a mincer. The mincing of the meat fibres means that minced meat cooks much more quickly than whole meat, in some preparations it is also consumed raw. Minced meat is obtained mainly from beef, veal, pork but also game, minced lamb and poultry are rarer.
