The beef tartare that I like, the recipe.
To tell the truth it is not a real recipe or in any case I believe that everyone at home makes it a bit as they like and with the most appreciated ingredients.
A quick dish and, if the quality of the products is adequate, very good.

Here are my ingredients:
– 300 grams of beef tartare (I find Fassona at the supermarket) whichever you prefer or find or can afford
– a pinch of salt and pepper
– a little chopped onion
– Taggiasca olives (I find them already pitted to save time)
– extra virgin olive oil
– a teaspoon of mustard

Mix all the ingredients with a fork and a spoon until you obtain a smooth mixture and leave to rest for half an hour.
The dish is ready to be enjoyed!

Baked chicken, the recipe

Ingredients:

– a fresh chicken (about 1 kg)
– potatoes
– extra virgin olive oil
– salt
– rosemary
– sage
– to taste: garlic, thyme, pepper, lemon,

To tell the truth, there is no real recipe for cooking chicken in the oven or at least the way it is done in my house is really simple to make.
First we need a nice whole chicken and (if you want the side dish) some nice potatoes cut into small pieces.
We put the chicken in a steel pan or (this has been a recent improvement in my house) a heat-resistant porcelain baking dish.
We brush well with extra virgin olive oil and add salt, rosemary and a few sage leaves.
We put everything in a fan oven (preheated) at 180° and leave to cook for an hour.
Obviously the cooking time will vary depending on the size of the chicken itself.
Every now and then take a look and, if you can, cover with the sauce that forms during cooking.
If you want a bit of a boost to the crispiness of the skin, add the grill in the last 5 minutes of cooking.

A nice grilled fillet cooked at home.
Although in restaurants they almost always have the possibility of cooking at higher and optimal temperatures to brown the surface of the meat, even at home the result can be very good.
This is a nice "filettazzo" very demanding and succulent.
As you can see I took the photos after tasting it... it was too mouth-watering!

Un piatto decisamente invernale è questo buon spezzatino di carne fatto alla tedesca o ungherese (con l’aggiunta di un poco di paprika).
Carne di manzo o di maiale, io preferisco il maiale, qualche patata e carota a pezzetti e purea come contorno da inzuppare nella gustosissima salsa.

Si tratta di una preparazione per lo più semiliquida (zuppa), che i mandriani cucinavano dentro un grande paiolo messo sopra un fuoco alimentato dalla legna all’aperto quando, ad esempio, trasportavano i pregiati bovini grigi di razza podolica (razza bovina dalle lunghe corna) dalla pianura della pusta ai mercati di Moravia, Vienna e Norimberga.

In Asia you often find these restaurants with a grill in the middle of the table where diners cook their own meal.
In this restaurant, where I went a year ago now, we had chosen beef and octopus. All spicy and all to be cooked!

One of my favorite leftover dishes are meatballs, my mom's obviously.
Inside there can be a little bit of everything but mainly potatoes, meat and ham.
Obviously everything breaded and fried.
A delight!

A plate of fried rice with meat in Vietnam.
In Vietnam, but I could say in Asia, I always manage to survive by eating fried rice which is found practically everywhere.
I usually have it with meat and a few vegetables but I can't always find something I really like.
I had this in Vietnam and I don't even remember in which, of the many places I visited, I had ordered it.
Nothing special for my tastes though.

Another delicious Vietnamese dish made with noodles, meat and eggs.
To tell the truth, there are more dishes in the photo, which I think I've already written separate posts about, but the one I ate was the one in the foreground.
Rice noodles, in broth, with meat (what I've heard called Vietnamese mortadella) and eggs (like an omelette cut into fettuccine).
It wasn't bad, if I remember correctly!

Kufta kebab a Barcellona.
Non posso certo dire di essere un amante della cucina mediorientale ma ogni tanto mi piace assaggiarne e fotografarne qualche piatto.
Diverso tempo fa ormai ero stato a Barcellona a fare un giretto e, complice un episodio che aveva fatto chiudere molti dei ristoranti turistici, avevo trovato (in uno dei vicoletti della Rambla) questo ristorante indiano.
Uno dei piatti che abbiamo preso era questo: composto da carne macinata (doteva essere agnello ma avevamo chiesto di manzo) cotta alla griglia con abbondanti verdure di contorno.
Non era male alla fine.

Il kufta è una polpetta, di solito di carne d’agnello speziata, che viene principalmente servita nei Balcani, nel Medio Oriente, nel Nordafrica e nel subcontinente indiano. Viene normalmente fritta, ma in paesi come Palestina e Giordania, il cufta indica la carne macinata cotta al forno. Quando viene cotta sulla carbonella viene invece chiamata kebab.

Da diverso tempo ormai ho queste fotografie scattate in uno dei mercati piu’ belli dell’isola di Palma.
Me le ero tenute per inserirle poco alla volta ma ho deciso di pubblicarle tutte in una volta perche’ iniziano a diventare troppo vecchie.
Prosciutti, spezie, pesce, carne, sushi, olive… e chi piu’ ne ha piu’ ne metta. C’era proprio di tutto in queto bel posto.
