The ancient pizzeria Di Matteo in Naples

Pizzeria Di Matteo a Napoli

The ancient pizzeria Di Matteo in Naples.
This is one of the most famous pizzerias in the Neapolitan capital and this is the golden oven that welcomes customers.
Obviously the oven is used to cook the very famous Neapolitan pizza, of which I have already posted many photos recently, and in particular that of the pizzeria Di Matteo (review by TripAdvisor).

Neapolitan pizza, with a soft and thin dough, but with high edges, is the version of the round pizza prepared in the city of Naples. It is considered, on a global scale, as the Italian pizza par excellence. Since 5 February 2010 it has been officially recognized as a Traditional Specialty Guaranteed by the European Union and in 2017 the art of the Neapolitan pizza maker, of which Neapolitan pizza is a tangible product, was declared by UNESCO as an intangible heritage of humanity.

Pizzaria tasted in Naples in the Pizzeria Attanasio.

A widespread belief has it that in June 1889, to honor the Queen of Italy, Margherita di Savoia, the chef Raffaele Esposito of Pizzeria Brandi invented a dish that he called pizza-Margherita (with reference to the fact that the term “pizza”, then unknown outside the city of Naples, almost always indicated sweet pies), where the savoury toppings that he got his hands on, tomato, mozzarella and basil, even represented the same colours as the Italian flag.

Pizza prosciutto e olive.

Pizza melanzane e stracchino

A pizza with aubergines and stracchino.
It's certainly not my favourite pizza but this pizza with aubergines (grilled) and stracchino (instead of mozzarella) is still inviting.

The pizza was of the Due Forni in Sestri Levante.

The etymology of the name “pizza” (which is not necessarily linked to the origin of the product) derives, according to some, from pinsa (from the Neapolitan language), past participle of the Latin verb pinsere or from the verb “pansere”, meaning to pound, crush, press which derives from the Mediterranean and Balkan pita, of Greek origin (πίττα, from the Greek πηκτός meaning “baked”); according to this last hypothesis the word derives from the Hebrew פיתה, from the Arabic كماج and from the Greek πίτα, from which also pita which belongs to the same category as bread or focaccia (see also History of pizza).
