Vietnamese Cuisine: Beef Noodle Soup Recipe. I haven't eaten beef noodle soup for a long time, so today, I bought a delicious piece of meat and want to cook beef noodle soup for me and my husband.

In Sestri I couldn't find fresh noodles (made with tapioca flour), so I used dry rice noodles that can now be found in all supermarkets, and so this dish can be called "beef soup with noodles". The vermicelli are soft and made with rice flour, while for the original recipe you would use fresh ones that are a little harder because they are made with tapioca flour. Put the piece of meat and water in a pot. The secret to preparing a good broth is to change the water itself when it reaches boiling point and rinse the meat under running water and then put it back to boil with new water, this way the broth will be clearer and more limpid. For the final cooking add an onion, a pineapple cut into pieces, a stalk of crushed lemongrass (which I can only find in a Chinese shop in Chiavari) and two anise flowers to make the broth more delicious. Since my husband doesn't really like the taste of lemongrass in the broth, I only put a crushed stalk. Then I add some annatto oil (if you don't know what it is click here) to give color to the soup: put some seed oil in a pan and add some annatti and fry everything until it takes color, then add this oil to the pan with the broth to make it red.
After boiling the broth for about 10 minutes, I lowered the heat and cooked for another 8/10 minutes also adding: two tablespoons of fish sauce, a tablespoon of seasoning, a teaspoon of MSG (glutamate), a teaspoon of sugar and then tasted again to add salt if necessary.
At this point, when the meat has released much of its juices into the water, you can remove it to cool and, after a few minutes, slice it thinly. Prepare some coriander for the final garnish.
At this point I put about 120 grams of noodles (for me and my husband) in the broth and cooked them until the vermicelli were soft (about 7 minutes), then I put the vermicelli in a bowl, added the meat, the coriander, a sprinkling of pepper and the broth, and the dish is ready to be enjoyed. I add more chili pepper at the end just to give that typical Vietnamese taste.
Lâu quá không ăn bún bò, hôm nay nhân tiện mua được miếng thịt ngon, tôi muốn nấu món bún bò cho tôi và chồng. Ở Sestri, tôi không tìm mua được bún tươi, nên tôi dùng miến khô thay thế, nên món này có thể gọi là “miến bò”. Sợi bún thì mềm được làm từ bột gạo, còn sợi miến thì nó hơi dai vì làm từ bột sắn. Hầm 2 cục xương và miếng thịt nạm với 1,5 lít nước để lấy nước súp. Bí quyết hầm ngon là khi nước bắt đầu sôi, bạn đổ nước này và rửa lại xương rồi hầm lại, thì nồi nước sẽ trong và sạch hơn. Nước sôi cho thêm vào 1 quả hành tây, 1 ít thơm đã cắt khúc, 1 củ sả đập dập (mua tại tiệm người Trung Quốc ở Chiavari) và 2 bông hoa hồi để nồi nước dùng thơm ngon hơn. Vì chồng tôi không thích quá nhiều mùi vị của sả trong nước dùng nên tôi cho chỉ 1 củ sả đập dập vào trong. Sau đó tôi nấu thêm dầu điều để tạo màu cho nước súp: cho dầu ăn vào chảo và cho thêm một ít hạt điều, rán cho ra màu, rồi cho dầu này vào nồi súp để tạo màu đỏ. Nước dùng sau khi sôi tầm 10 phút tôi để lửa giảm lại, nêm gia vị và nấu thêm trong 8 -10 phút. Gia vị gồm: 2 muỗng canh nước mắm, 2 muỗng hạt nêm, 1 muỗng cà phê bột ngọt, 1 muỗng cà phê đường, sau đó nêm nếm lại và cho thêm muối vừa ăn. Gắp thịt ra để nguội và thái mỏng. Chuẩn bị thêm ít rau hành ngò để trang trí bên trên. Tôi lấy 2 cuộn miến, tầm 120 gram cho tôi và chồng, rồi tôi cho vào nồi nước súp ở trên, nấu đến khi miến mềm (Tầm 7 phút) là cho miến ra tô, bỏ thêm thịt, rau hành ngò, rắc ít tiêu và nước súp, là có thể thưởng thức được rồi. Tôi cho thêm ớt sa tế để đúng hương vị Việt Nam.

A simple bowl of soup in Vietnam. A while ago now I went to visit my girlfriend in Vietnam and, passing through the city of Hoi An (the famous Vietnamese city of lanterns), we had lunch in a restaurant and I had a bowl of soup with noodles and a glass of fresh pineapple juice (which cost more than the soup!). If I'm not mistaken it was a dish called Hoi An Wonton Noodle soup with crab meat prepared in the restaurant Morning Glory.

Mi quang noodles, a nice Vietnamese dish. A nice, very colorful dish from Vietnamese cuisine: mi quang noodles. Noodles, as you all know, are soy spaghetti (usually) very common in Asia and this dish is typical of the central part of Vietnam and exactly from the area called Quang Nam from which the dish takes its name. It is prepared by sautéing pork, eggs and shrimp. Then you add a little broth, some raw vegetable leaves (lettuce, basil, escarole), chopped peanuts and chili sauce. If you need a little salt, you can add fish sauce.

Glass noodles in Vietnam. Uno dei piatti che piu’ mi piacciono in asia sono quelli in cui l’ingrediente principale sono i noodles. Questi poi, chiamati di vetro (come e’ facile intuire si chiamano cosi’ perche sono trasparenti), sono tra i miei preferiti. Bun thit nuong: grilled pork with noodles. A very typical cold dish of Vietnam with rice noodles and pork. The dish is very simple and garnished with some sweet and sour vegetables and some toasted peanuts. Good for my taste too and if it were hot it would be even better for me! I don't remember the place where I tasted this dish and, since it is not typical of a particular region, it doesn't make me remember where I was.

Mi quang ga: noodles di pollo in Vietnam. Un altro piatto molto tipico del centro del paese ma e’ uno dei piu’ conosciuti. A dire la verita’ c’e’ un po’ di tutto in questo piatto, come potete vedere anche voi: noodles, uova, pollo, verdure, semi… Molto buono a detta della Dao che lo aveva mangiato.

Crab soup and noodles in Vietnam. In Ho Chi Minh, Vietnam, you must eat crab and especially the soup. This is the same dish I have already posted another time, only the photo changes. This one is made with the meat of the crab claws cooked in a very tasty broth (perhaps thanks to the glutamate) and very thick rice noodles. I must say that we have also tasted it in other places but there was practically no trace of crab. Very good!

The abdomen is folded vertically and is therefore hidden. Bún thang in Vietnam, a dish made with meat and eggs. Another delicious Vietnamese dish made with noodles, meat and eggs. To tell the truth, there are more dishes in the photo, which I think I've already written separate posts about, but the one I ate was the one in the foreground. Rice noodles, in broth, with meat (what I've heard called Vietnamese mortadella) and eggs (like an omelette cut into fettuccine). It wasn't bad, if I remember correctly!

Crab and noodle soup in Vietnam. This soup, which as you can see is made with crab, I had in Ho Chi Minh. This one is in fact made with the meat of the claws cooked in a very tasty broth (perhaps thanks to the glutamate) and nice thick rice noodles. I must say that we have also tasted it in other places but there was practically no crab in it. Here instead you can see the beautiful (and enormous) claws! Very good!
