Excellent fresh ravioli from a pasta factory in Sestri.
Not everyone has the time, patience and talent to make fresh ravioli at home. In my house they are made for Christmas and Easter (and only in a few other exceptional cases). The rest of the time, vegetable ravioli (lean) are bought already made (more or less artisanal) in local pasta factories.
These are the ones prepared by Pastificio Moderno in Sestri Levante.
