The best ravioli (raieu) with ragú (au tuccu) in Eastern Liguria.

For some time now I have been trying to keep track and rank what I think are the best ravioli with ragù (the real one is called tuccu from the Genoese tocco, a piece, from the piece of meat cooked for a long time that we use to make the ragù) of the trattorias in my area. By “my area” I mean the eastern part of the Province of Genoa and the relative hinterland (since I live in Sestri Levante).
I'll say it right away: tocco is not always used as a condiment, sometimes it is the classic but equally tasty meat ragù.
Mine is not intended to be a competition but just a way to let you all know the best places, in my opinion, to go and eat this excellent dish.
I hope no one feels offended (de gustibus non disputandis est) also because, wherever I have been, I have come away satisfied!

Obviously these are the places I have visited and for this reason I ask you to suggest new ones. I promise I will try them when I am home and then I will write a post about them.

La cucina ligure è costituita dai piatti della tradizione culinaria della Liguria, regione fa uso di ingredienti legati sia alla produzione locale (come il preboggion, miscuglio di erbe selvatiche), sia alle importazioni provenienti da zone con cui nei secoli, i liguri hanno avuto frequenti contatti (come il pecorino sardo, uno degli ingredienti del pesto).
Una cucina povera, propria delle genti di campagna, dei montanari e dei naviganti, fatta di alimenti semplici, comuni ed economici, che è tuttavia diventata costosa, ricercata e piena dei fasti antichi.

Ravioli al ragù di U Pellegrin a Romaggi.
Un altro post (e relativa foto) di un bel piatto di ravioli al ragù di carne. Questi, in particolare, sono della trattoria U Pellegrin (clicca qui per la recensione su Tripadvisor perché non ho trovato un sito ufficiale) a Romaggi nell’entroterra chivarese.
Devo dire che è stata una splendida scoperta questa osteria perché i ravioli sono veramente, spero non si offendano gli altri, i migliori che abbia più mangiato da quando il vecchio ristorante Ennio, a San Colombano Certenoli, era aperto.
Voto: cinque su cinque!
