L’Emilia-Romagna è una regione italiana a statuto ordinario dell’Italia nord-orientale. Prefigurata nel 1948, venne istituita ufficialmente il 7 giugno 1970 con le prime elezioni regionali. Il capoluogo è la città metropolitana di Bologna. Amministrativamente unite, l’Emilia e la Romagna hanno tradizioni e usi alimentari differenti. La cucina emiliana, a causa di quasi otto secoli di autonomia di comuni e città, conta diverse tradizioni culinarie. Essa ha fama riconosciuta di cucina solida, saporita e generosamente condita. La cucina romagnola, legata alla tradizione contadina della regione, è in confronto più semplice e ruvida, come scrisse il forlivese Piero Camporesi «di gusto primitivo, quasi di fondo barbarico».
